Plant-Based Banana Muffins

Serving size: 16 small-sized muffins

Ingredients

Hegg Mixture

  • 20g Hegg Powder 
  • 80ml Water

Wet Ingredients

  • 3 bananas
  • 5.5 tbsp unsalted butter
  • 1 tsp vanilla
  • 1/4 cup coconut cream

Dry Ingredients

  • 1.5 cups of all purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 tsp cinnamon
  • 3/4 cup sugar

 

 

Steps

1. Bake three bananas at 180°C for 10 minutes until the skin blacken.

2. Mix 20g Hegg powder with 80ml water

3. Whisk the dry ingredients

4. Mix the wet ingredients

5. Combine the dry and wet ingredients

6. Divide the batter among each paper liner (half-full)

7. Bake for 5 minutes at 190°C and another 20 minutes at 180°C

8. Garnish it as you like!
